I know, I'm probably not the only one here who hates being poisoned while leveling. So I was thinking that after getting poisoned you are able to go to Sakura and buy an antidote or have her rid of the poison for a small fee.

Would somewhat defeat the impact of the poison... but with a larger fee it would make sense.

Also, some anti-venoms would require rare ingredients...

True, a larger fee would make sense for various anti-venoms, but what about crafting the anti-venom?
Poison would still have it's impact, but every now and then in cases of near-death you could use the anti-venom you made.
