Some genins and Chunnins have a lot of hp, sometimes even 1k. How can it be possible?

That's a lie. Likewise, check their biographies before you fight them. Custom titles allow you to name your character any rank they want. It can be an account with 700 kills naming themselves an Academy Student just to throw people off.

Yeah, I exaggerate it a bit, but I see people in lvl 7, sometimes with 200hp. How is that possible?

They earn hit points in the forest. Many ways to go about that.

You also have the special events that can allow somebody to say, trade a gem for a potion that give them more HP, or drink from a stream that does the same thing. It all depends on how they go about it.

Also, i must say, sometimes I despise sitters... People who spend so much DP to make their character basically invincible in PVP... Yeah. Well I guess they have their uses when you want to suicide... But other than that.
