Dudes think their series is failing, or think it at it's peak, and want it to end, so they take a stand with the editors at jump, and let them end it.
Usually the only way a series ends, is when it gets lame and the ratings drop.

Well the probably have, but the problem is, it's a flagship series, and still has this huge fanbase, which they want to suck as much money from as they can. They won't can it until it really drops.

Freaking Dragonball didn't even last that long, and he was CONSTANTLY trying to quit.

I don't believe that Kubo is really trying to end Bleach. If he was, he would've wrapped things up.
Say what you will about DBZ, every time he tried to end the series, it had a good ending.
Ending 1 - Goku gets married, and starts a (relatively) normal life.
Ending 2 - Goku becomes a Super Sayain, and dies fighting the most powerful force in the universe.
Ending 3 - Gohan surpasses his father, and saves the world on his own.
Ending 4 - Vegeta and Goku stop hating eachother, Gohan has a kid, and Goku takes an apprentice.
Ending 5 - Go to hell GT <_<

Part of DBZ was the transition from Anime to Manga.

First he did Dragonball, and that did well, so I think he decided to do DBZ to go off that.

When DBZ Anime finished Frieza, there was this whole, NUUUUUUUUUUU, cause it was so popular, so they keep going, whereas the Manga only went to that point.

Then after Cell I think he wanted to wrap it up again, but was probably told to keep going, and I personal think the Buu Sagas weren't as good as the rest, even Cell to a degree. Basically the same each Saga, big badguy comes, have to transform to a new level and pwn all.

The GT... that was only part the original guy I think.
