Like suppose a ninja is thirsty, could s/he use water release to quench themselves? Or wood release to make some banana trees?

Water yes, wood I don't think so. Mokuton doesn't really bend to creating else from scratch besides the simpler leafy trees, maybe pines.

Well, wood release does have the ability to sprout flowers. I imagine some sort of fruit or nut isn't exactly that far-fetched after that.

If you're a high level user, yes. You just draw water from the air or ground. Now if we're talking about a desert or something where the air is dry and so is the ground you have nothing to draw from.

If there are no existing sources, then a new "source" would have to be inspired or outright created by the user. After all, you would only have to create the flowers and plants once, maybe twice and they would last you quite a while.

How much of that water is potable though? Like, does some of your own spit get in there when you spew it from your mouth? Does the water last indefinitely? I wonder if water release users in Wind Country are highly valued considering the mass amount of desert. Just imagine, get some good corpses and manure + water + management jutsu and Bablyon Garden Wonders could be built all over the desert country.

I feel like it stays as long as you utilize chakra control to stop it from soaking into anything, and I guess drinking it would just restore your chakra reserves?

If that's true, what if someone else drank it? Would they convert it to chakra? Seems like a good way to get out of a water prison. You're getting hydrated AND gaining chakra.

I think if it's not your chakra then it wouldn't return to your reserves, it would just drown you or whatever,

I think so. But if the user did it, they wouldn't be gaining that much back due to how much they expended to use in the first place.

I highly doubt it would restore your chakra reserves just by drinking it. I think it would just hydrate you, unless you have the ability to absorb chakra.

Only advanced users can turn their own chakra to water. In the sense of normal Naruto ninja doing this they wouldn't be able to. So like Kisame and Zabuza would probably be able to but a normal chunin or maybe jounin wouldn't be able to. It's much easier to manipulate pre-existing water.
Using your own chakra while near death from dehydration is a fine line. Dehydration probably drops your chakra levels dramatically and since they are so low yet you're also dehydrated you might die either way.
No chakra = death
No water = death
You'd have to decide if you have enough chakra or not if you were in a desert.

If they were hit with scorch release while transformed I imagine it would be possible.

Or just extreme heat in general. Could say that houzuki don't burn, they just evaporate into nothingness.

Technically the hozuki would be mist. Water turns into gas once it becomes hot enough, it doesn't turn into nothingness and cease to exist. Could the hozuki then re-condense themselves afterwards or are they forever mixed in with the air? Reminds me of Yakan's smoke transformation.
If the pressure was high enough in the surrounding area and their mist becomes water again would they 'revive'?

I say its possible depending on how they are turned to mist. Suigetsu proved that sufficient force can knock out a person using Suika no Jutsu, reverting them to a jelly like state. So if hit hard enough to the point the user would turn into mist, I say their minds would be too damaged to revert back, meaning death.

So, yes, evaporate. I imagine if they were evaporated the separation of the water molecules would kill them.

Well what if they get like a vat of Lava dumped on them, or encased in it so that there's no where for the Mist to go? What would happen then?

They would be broken down to individual water molecules. Unless the hydrogen bonds are broken, they should still be able to reform whenever the water molecules have a chance to escape. Technically, If they stay in vapor state, they should be able to live indefinitely. But now we're really grasping at straws and speculating. We're at Ancient Aliens level of speculation now.

They cannot live indefinitely because this state requires chakra to use; once they run out of chakra in the lava example, presuming they are not forced to revert back sooner, they would return to normal and be melted or die from 0 chakra, whichever came first. As a vapor state, similar principle applied, but recall that the Hozuku are not purely water, they are more like a water-based slime of sorts that would likely have a different boiling point than regular water. The water would be boiled while the leftovers would probably take longer to evaporate, presuming they don't just burn or are turned to ash.
So I think getting hit with scorch release would still kill a Hozuki off, transformed or no, as would being encased in lava.

I feel like the big thing they would have to worry about with lava would be turning into rock, right? When the lava would hit the Hozuki body water it would probably start solidifying and evaporating them all at once

The lava turns to rock not the water. The water cools it down so the once fast moving atoms settle and get close together to form rock. Water will get evaporated in the process no doubt. With enough lava the hozuki would evaporate soon enough.
