i was wondering, if you get reborn and choose the sharingan, will you be able to copy opponents moves like orochimarus cloning thing that he does? or other stuff in that nature?

sadly, stuff like that is not thought well through in Naruto. -_-
think about it. All Uchiha would be knowing all possible justus. They could even pay people to show them. And then, in the family, show them around... and so on.
Unstoppable, even without their genjutsu.
That's why there is only Sasuke left... that's harmless. Kakashi has only one eye and cannot give it to his possible children as it is an implanted one.

There is chakra control and physical ability to prevent that particular scenario.
